Surely on your weekend getaways in the town of your parents or grandparents, you will have tried those classic sausages preserved for a long time in a clay pot. Today we are going to teach you how to make sausages in orza, a homemade and traditional canned recipe that allows the chorizos to be ready for consumption for many months, without spoiling.
The orzas are clay pots with a lid, in which you can cook food or you can simply use them to preserve them. There are daggerboards of many sizes and with different shapes, but all of them are ideal for preserving meat or cured meats, protected with olive oil or lard.
This way of preserving food does not require colder than necessary for the butter to be solidified, and thus you can have pork loin, chorizos, bacon and other pork pieces ready for when you want to use them, in the way that has been described. traditionally made in our country for centuries.
As many of the clay daggerboards are not suitable for ceramic or induction hobs, We are going to cook the chorizos in an aluminum pan that we all have at home and then we will transfer them to the clay daggerboard to store and preserve.
Put the lard in a saucepan and turn the heat to a minimum so that it melts. in that time, remove the staples and strings that the chorizos have and prick them slightly so that they release some fat when cooking.
When the butter is hot, add the chorizos and fry them for four or five minutes on each side, submerged in the butter. If they don’t all fit, we can do it in batches. When they are ready, we pass them to the daggerboard where We will place them neatly.
Once the process is finished, add the melted butter -which will have taken on the reddish color of the paprika from the chorizos- on the chorizos that we have in the daggerboard, letting it cover them completely. When the butter cools and solidifies, they will be ready to be kept inside for months. The red butter that covers themis also great as a spread on toast, the classic colored butter Andalusian breakfasts.
