Blaming the time it takes to cook lentils for not eating them is a bad excuse. Especially when we know that at our side are the pressure cookers or quick cookersguarantee of acceleration of any process.
In this case we are going to use them —either of the two will do— to make some championship lentils in just over 25 minutes and without the need to complicate our lives more than necessary.
The result, as you are going to see, is perfect for solving a traditional first course with hardly any complications. In addition, the rest of the tricks for lentils such as thicken the broth or get a good stir-fry are still intact.
On this occasion, our lentils are ‘widowed’, that is, without any meatbut you can do the same preparation if you add your favorite cured meats such as black pudding, chorizo or ham, or even pig’s ear or tail.
We cut the coarsely chopped vegetables because later we are going to recover them and brown them in the express pot with a little oil. Add the lentils, spices and fry everything together for a few minutes.
Add the water or broth we close the pot in position 1 and put on high heat until it begins to have pressure. When the pressure comes off, cook over medium heat for 15 minutes.
After that time we turn off the heat, open the pot and recover the vegetables, crushing them separately with a little broth. We reintegrate the crushed vegetablesSeason with salt and pepper and serve hot.
For the meat alternative, they should be incorporated when adding the lentils and, at the end of cooking, skim the broth.

With what to accompany the lentils cooked in an express or fast pot
Resulting main course, simple and attractive, these lentils do not need too much company to become the daily menu. We can accompany them to the second course with a little grilled fish or a French omelette, following the trend of fast cooking.
You can also combine our adventure at the cost of lentils with a fresh tomato salad to share in the middle or resort to the classic mixed salad, which can also work well and make the lentils fancy even in summer.
