We are in the final stretch of August and for many that means rushing through the last days of vacation, who can still enjoy them. But September is looming for everyone and going back to school and the routine is going to make it a bit difficult for us to organize the menus at home, so it never hurts to stock up on ideas for lunch and dinnerand in a healthy way.
Because if before the summer the star theme was the -very badly called- operation bikininow we meet again with the daily routines in which to leave behind the possible excesses or, simply, feel like eat well with homemade dishes. And without leaving the summer atmosphere in the kitchen, we have gathered a good selection of healthy recipes and managed in our walks through the networks.
Salads and lots of vegetables
It will continue to be hot for several weeks in much of the country, so we are not going to say goodbye to fresh salads and fresh dishes so quickly. They are also more appetizing now to share on the terrace or on a picnic, when it cools down more in the evening. And these are great dishes to leave ready in the fridge and complicate the least at home.
We like to remember that legumes can be enjoyed in salads as fresh as the colorful White beans that Javi Recetas teaches us, or the complete mixed chickpeas from Cook and mother, super nutritious and full of healthy proteins.
At a picnic or barbecue we could combine any of them with the green bean, yogurt and mustard salad Craving in your kitchen, also rich in protein content, or with the colorful and practical salad in a glass of couscous with pear and red pepper vinaigrette of Blog of cuina de la Dolorss.
We also like very much to remember the Moroccan recipe for aubergines called zaalouk, which they have also recently discovered in Mercado Calabajío, delicious with good bread, and we feel like the most appetizing carrot and zucchini quiche with oatmeal dough of ChupChupChup, which can be eaten freshly made, warm or chilled.
Healthy recipes with a taste of the sea (and some meat)
We have already said many times that summer tastes like the sea, and you have to take advantage of the season of fish like the blue ones. Precisely with bonito from the north we have in Frabisa’s kitchen a wonderful bonito in tomato sauceas simple as it is traditional, just as typical and easy as the tuna with onions from Asopaipas. They are also perfect dishes to store in a container, leaving them ready the day before.
Salmon is another very versatile fish that everyone likes, and it lends itself to very diverse and healthy dishes, including summer ones, such as marinated salmon skewers of Sweeter than salty or the very fresh salmon ceviche with passion fruit by Sonia in L’Exquisit.
And in simple dishes but more of dipping bread, we have some cheap ones baby squid in red pepper sauce from the hand of Cooking with the girls, although if we prefer some meat we stay with the rich ones quail breasts in beer sauce from With a garden flavor, or the exotic touch of the Thai meatballs with green curry from Migas at the table.
