The papillote is a cooking technique that is based on the principles of steam cooking to prepare all kinds of food like chicken and vegetables inside a package. It is very comfortable, easy, healthy and very fastespecially when we use the microwave, with which we will save a lot of time and energy.
With this recipe we have a simple resource to quickly cook lunch or dinner, achieving a very complete dish, healthy and suitable for many diets, which we can customize with small changes. We have used a whole medium-sized breast, free of fat and skin, perfect for a portion, but it can also be adapted to filleted pieces, only the times will have to be reduced.
If you remember you can leave marinating the meat for a few hours or overnight in a mixture of lemon or orange juice, a little extra virgin olive oil, plain yogurt, mustard, fresh or dried herbs, spices, soy or hot sauce, etc. A standard salad vinaigrette is just perfect to spice it up, but it’s not essential.
Dry the breast with kitchen paper and let it cool down a bit. If you have time, season and leave marinating in a bag in an airtight container or in a covered bowl, in the fridge, with a mixture of olive oil, lemon or orange juice, a little low-salt soy sauce, herbs and spices, etc.
Wash and dry the vegetables well. Peel the carrots and cut into not too thick slices; If you use a large zucchini, you can cut the slices into half moons, and the squash into small cubes. Cut the spring onion into feathers or fine julienne and the lemon into slices.
Cut a large sheet of non-stick baking paper and arrange the vegetables in the center. Season, add a little oil (optional) and Provencal herbs and mix. Form a small hole in the center and arrange the breast. Top with more Herbes de Provence and arrange some lemon slices.
Close the package as if it were an envelope, making sure that there are no holes through which the juices can escape, place on a microwave-safe plate and heat at maximum power 8 minutes. Carefully open a little, add the cherry tomatoes, close again and heat for another 2-3 minutes. Let rest inside the device unopened 2 minutes.
Depending on the size of the chicken and the power of the microwave, it may take more or less time; find out it is well cooked inside.
With what to accompany chicken en papillote in the microwave
The idea is to be able to prepare everything in the same package of papillote and not having to think about more side dishes, but we can always enrich the menu with a little brown rice or quinoa also cooked in the microwave, or simply accompany lunch or dinner with some quality bread, when we are looking for a more energetic menu. If we opt for something lighter, a simple green salad and seasonal fruit for dessert will make a very complete meal that will hardly take us long to prepare.
