We season the meat minced meat of our choice (we used veal) with cumin, nutmeg, oregano, grated garlic cloves, finely chopped onion, salt, black pepper to taste and lemon juice. Mix well, cover and let rest in the fridge for an hour.
After the rest time we divide the meat in two portions and we give them an elongated shape. We heat a griddle, add a thread of extra virgin olive oil and sear the meat on both sides until it is well browned.
While the meat is cooking, prepare the accompaniment of our gyros. Cut the tomato into small cubes, chop the onion and wash the lettuce well, separating several leaves. If we opt for tzatziki sauce instead of Greek yogurt, with our recipe it will be luxurious.
We ride the gyros spreading the sauce of our choice on the base of the pita bread and, on top of it, place lettuce leaves, the meat, diced tomato and onion. Roll the pita bread over the filling and serve immediately.
