In this elaboration, it is necessary to take into account above all the advice so that the salmon is perfect, since they are rather recommendations rather than a traditional recipe to use. Grilled salmon is obviously made by putting the salmon on a hot griddle, leaving it until it’s to our liking, but what?how to get a perfect fit?
We start by taking the fish out of the fridge and leaving it at room temperature, at least 20 minutes, so that you don’t notice a contrast in temperature when we cook it and so on. we will prevent the meat from shrinking and contracting. Next, already tempered, we cut the two portions and dry well with absorbent kitchen paper. Then we season to taste – we could also paint each loin with a silicone brush dipped in soy sauce.
Finally, on a very hot griddle -or a carmela or ribbed pan- we proceed to cook the salmon loins. we cast a few drops of olive oil in the pan when it is already hot and we extend them with the silicone brush or we give a touch of oil spray and place the salmon, starting to cook it on the skin side.
we let it be cook for two to three minutes over high heat, until we see that the color of the part closest to the pan begins to change color and rises approximately half a centimeter. We turn the piece over and cook it on the other side, leaving another couple of minutes, and we put out the fire, although the center has not yet changed color. (This part will be finished with the remaining heat). We serve quickly with the chosen garnish.
