The other day we had a mishap at home with the electrical system, and we were left without being able to connect any appliance. The first thing I thought of was my beloved oven, not only because baking cookies and breads is almost a vital necessity. There are salty dishes as comforting as these gnocchi or gnocchi alla sorrentina which would be difficult for me to give up.
The sauce with which the rich potato dumplings are mixed is very basic but one of the favorites at home, since with few ingredients it can be raised in a delicious way a pasta dish or, as in this case, gnocchi.

Heat a pot with plenty of salty water. When it’s boiling, add the gnocchi and stir slightly so they don’t stick to the bottom. Bring the water to a boil and drain quickly, gently, when the gnocchi rise to the surface. Preheat the oven to 200ºC.
Chop the spring onion and garlic clove. Heat a little olive oil in the bottom of a pan and poach the spring onion with a pinch of salt a few minutes. Add the garlic clove, stir well and add the tomato with its juices. Add a pinch of black pepper, salt and basil to taste. Let the liquid reduce for about 10 minutes over low heat.
Add the gnocchi, stir and add half of the mozzarella cut into small cubes. Mix well. Transfer to a suitable baking dish, distributing all the ingredients evenly, and cover with the grated Parmesan. Chop the rest of the mozzarella and distribute it on top. Add a dash of pepper and bake with the gratin about 5-10 minutes.
