I really like eating fish and whenever I find a good specimen in my fish market I take it home to prepare it. So this week I found a St. Peter’s Rooster also known in other areas as gallopedro, San Martin either San Martinoand I brought it to cook it in the oven.
This San Pedro rooster is distinguished by the two black marks that it has on its sides that come from the legend that the apostle took it finding a coin in his mouth, with which he paid the taxes that the Romans asked for. Everything that he has that is ugly, he has that is rich, because his meat is very white and very smooth.
Out of curiosity, despite being a fairly flat fish such as flounder or roosterthis fish swims with its body perpendicular to the bottom and not lying down, so it has one eye on each side and not both in a single part like the others.
As the potatoes take almost 30 minutes to be ready in the oven, we start with them, and then add the fish halfway through cooking. Cut the potatoes into slices of approximately half a cm and distribute them on the oven tray.
On them we place the onion in julienne and the green pepper in small pieces. Season to taste, add a little extra virgin olive oil and a splash of white wine and put in the oven at 180ºC so that they are done.
When they take approximately 20 minutes, we season the fish and place it on its bed of potatoes. It is not necessary to make cuts, because it would overcook. With the heat of the oven, it is possible that the San Martiño will open as you can see in the photo. We let it cook without touching it for approximately 15 minutes and turn off the oven, letting it rest while we make the ajada.
In a frying pan we brown two filleted garlic cloves and a few flakes of chilli with three tablespoons of extra virgin olive oil. When the garlic has a nice color, we put a little chopped parsley in the pan and pour the entire contents of the pan over the San Pedro rooster, before taking it to the table.
