Those of you who have Thermomix at home will know that it is the perfect pinch and that it saves us tasks that are somewhat tedious. One of them is to remove certain preparations that require our constant attention, whether they are croquettes, rice pudding or the traditional fried milk so present at this time of year.
A simple recipe, but it requires special care so that the mixture does not stick to the saucepan at the time of cooking. This does not happen with Thermomix, with which you always get great fried milk. For battering and frying, we give you a series of recommendations with which to finish the job. Dare to make it and you will see how delicious it comes out.
We introduce the milk, sugar, flour, cornstarch and two eggs into the Thermomix glass and mix for 15 seconds, speed 3 1/2. We add the cinnamon stick and lemon peel and program 9 minutes, 90ºC, speed 2 and turn left (if using TM21, the left turn is supplied with the butterfly).
While the milk is cooking, coat a rectangular mold with a thin layer of butter and sprinkle it well with icing sugar. We pour the cooked milk inside, after removing the cinnamon stick and lemon peel. We cover with transparent film, so that it remains in contact with milk so that a scab does not form.
Once the milk has been tempered, we put the source in the refrigerator and let it cool and harden for a minimum of four hours. Even better if it's all night.
We turn it out onto a board sprinkled with icing sugar, to prevent it from sticking, and cut it into small squares. We coat each one in flour and beaten egg and fry in plenty of hot oilturning so that they brown on all sides.
Remove from the pan, draining the portions of fried milk well and placing them on a covered platter. with absorbent paper so that there is less fat. Before serving, sprinkle with a mixture of icing sugar and ground cinnamon.
What to accompany fried milk with Thermomix
This traditional Easter dessert is served in many restaurants, accompanied by an English cream and a little ice cream. And it's delicious. But at home we prefer to take the fried milk alone, as is, without frills and freshly made. When hot it is a slow death.
