I haven’t tried a variant yet hummus I didn’t like it, although it is true that the original recipe for traditional hummus, when it is really well done, is unbeatable. But there are days when you feel like something lighter and different, especially on summer nights, when snacks knock on the door and you don’t really want to get complicated.
That is why this white asparagus hummus is one of my favorites since I tried it at home the first time, and I have repeated it on many occasions. All you have to do is grind some cooked chickpeas with a few canned asparaguswithout having to invest in top quality products -the great and nationals we leave them to taste natural, of course-, and adding other seasonings to taste.
The asparagus makes the hummus acquire a very soft and light, refreshing, perfect for dipping and spreading all kinds of vegetable crudités, some crunchy scolds, breadsticks, homemade nachos or whatever we fancy the most. It’s great with homemade naan bread or chapati, although I love dipping very crunchy and cold carrots.
It is essential to crown with a good stream of lemon juice, extra virgin olive oil and some herb that we like. Here we are fans of coriander, but we are not going to force anyone to eat it.
