One more week and the temperature continues to rise. For this reason, we propose a weekly vegetarian menu easy to follow and implement, with short cooking times and mostly in the pan, so as not to turn on the oven. Preparations where vegetables, fruits and legumes are the protagonists. The latter being our best allies and the main source of plant-based protein.

Monday
- Lunch: Zucchini, feta, mint and walnut salad for main course, with whole wheat or rye and wheat toast on the side.
- Dinner: Seitan steaks with Greek coleslaw and medium round tomato.
Tuesday
- Lunch: Pico de gallo with black beans, jasmine rice and sauteed chard.
- Dinner: Macaroni with sweet potato or sweet potato sauce, natural yogurt and milk
Wednesday
- Lunch: A serving of vegetable tortilla with a tomato, peach and burrata salad with spicy dressing.
- Dinner: Pan-Seared Browned Tofu with Lemon Microwaved Artichokes and Beet, Goat Cheese, and Blueberry Salad.
Thursday
- Lunch: Textured Soy Stuffed Eggplant with a serving of raw carrots with cumin-lemon vinaigrette
- Dinner: Zucchini and eggplant meatballs over a serving of al dente pasta or pillaw rice for variety
Friday
- Lunch: Avocado and cucumber gazpacho followed by a sandwich with whole wheat bread, Philadelphia Vegetable cheese, green apple, mustard and green leaves.
- Dinner: Falafel with pita bread, coleslaw or crispy red cabbage, and sliced avocado
Saturday
- Lunch: Vegetable quiche with fresh green salad leaves.
- Dinner: Vegan burger with beans, nuts and oats with a side of grilled vegetables, or the classic fries, or a salad.
Sunday
- Lunch: Tabbouleh with nuts and feta with roasted vegetables and hummus spread.
- Dinner: Grilled mushrooms with garlic and parsley with a serving of quinoa or brown rice and baked kale chips.
