Although one of my favorite dishes in winter is the full traditional Madrid stew, many times what I most want is the cooked soup that today we are going to teach you, without the need to eat all the overturns.
Of course, to make a stew soup you have to prepare a complete stew, although we have a thousand ideas to take advantage of what is not part of the soupwith recipes to use both cooked chickpeas and meat, in ropa vieja or simply, preparing some always appetizing stew croquettes.
The stew soup is based on a very tasty broth, made with legumes, meat and bones of pork, beef and chickenand while it looks similar to our delicious bone broth, it’s a much quicker recipe since it doesn’t require as much cooking.
Add one or the other ingredients, totally changes the flavor of the stew broth, so that in each house -and in each restaurant- the touch and preferences of each chef are noted. We give you our recipe but, obviously, you can increase or reduce the number of ingredients, depending on your tastes.
For the soup to be a real cooked soup, we put the chickpeas soaked overnight, the potato, the carrot, the bones and the meat, covering with water and adding a little salt. Bring to a boil with the pot uncovered.
we withdraw the first thicker foams that form at the beginning and we close the pressure cooker, letting it cook our stew for 20 minutes, with two pressure rings.
When that time elapses, we put out the fire and we let the pot depressurize without opening it. Then, we remove chickpeas and meat and strain the broth.
To make the cooked soup, we heat the clean broth and add some scallop-type noodles or the thickness that we like the most. We cook them for the time indicated on the package -between 3 and 9 minutes depending on the variety- and we bring them to the table in a tureen, so that the soup maintains its temperature.

With what to accompany the cooked soup
For accompany the cooked soup, -with its noodles- the best options may be to add a few chickpeas from the stew or even some of the shredded meat, although the stew soup is much more enjoyable without adding anything. In some areas of Spain, it is customary to put a leaf of peppermint in the center of the plate, which will perfume each spoonful.
