The original recipe in which we have been inspired uses as an ingredient that helps to give texture powdered preparation for pudding, very typical in German confectionery, but in our case we have replaced it with vegan protein powder vanilla flavor. You can use the one you like the most or, failing that, substitute it with cornstarch, rice flour or even ground almonds or very fine oatmeal, although in the latter cases the final texture could be somewhat different.
As for the sweetener, if you are used to less sweet desserts, you probably won’t miss it, especially if you have already used flavored protein -which usually have a sweet touch-. But if you prefer to give it a sweeter touch, try with about 40 g of erythritol or the equivalent liquid sweetener that you usually use.
The ingredients mix better if they are at room temperature, not very cold. Preheat the oven to 170ºC without air, with heat above and below. Prepare about 6-8 individual molds, for example silicone, or a greased muffin tray.
Beat in a bowl with stick blender cheese, yogurt or skyr, egg, vanilla essence if using, and sweetener (if liquid), if used. Add the protein powder (and the sweetener if it is granulated) and beat a little more until everything is incorporated.
Distribute in the molds, crown with fruits to taste pressing lightly and bake for 20-25 minutes, until when you click in the center with a toothpick it comes out clean. Wait outside the oven to cool and refrigerate at least one hour before serving.
