We begin by washing the ears well and then cook them in plenty of water with salt and a bay leaf. We let cook for an hour and a half approximately -20 minutes if you do it in a slow cooker- and when it is very tender to our liking, we cut it into small pieces.
Meanwhile, we will make the sauce. To do this, we start slowly sautéing the julienne cut onions. When it begins to take color, we add a splash of cooking broth from the ear, so that it always remains moist and soft and takes color very slowly. As it runs out of liquid, we add a little more and thus, we can confit it over low heat while the ear is cooking.
When the onion is very tender and somewhat golden, add the garlic and chillies (optional but necessary if you want a spicy touch in the sauce) and a tablespoon of sweet (or hot) paprika to taste. We sauté for a few minutes and add a tablespoon of flour, which will serve to bind the sauce. Then we add half a glass of water or broth and let it reduce. If you prefer, when you finish you can blend the sauce to avoid any lumps. It is up to your taste.
We add the pieces of ear and mix them with the sauce. We let them come to a boil to get the flavor and then we taste, to be able to adjust salt if necessary. We transfer the stew to a clay pot and bring it to the table immediately.
