Surely it won’t surprise you when I tell you that the pancakes with dulce de leche They are a traditional dessert in Argentina. Although on the other side of the pond they are prepared in a specific frying pan called a pancake maker (like our crepe pan), if you don’t have it at hand you can decently manage with a normal non-stick frying pan. They do not have any complications and they will work out just as well.
In its most basic and simple, this recipe only has pancakes and dulce de leche. However, when eating them, there are those who sprinkle them with icing sugar, accompany them with a scoop of ice cream or fresh fruit, etc. To the taste of the chef and/or the consumer.
If you have time and desire, you can do dulce de leche at home. We have already told you how to do it in two different ways: the traditional one and the quick one, in an express pot. With this second method, a more suitable thickness is achieved for filling, so it is the one we recommend for this recipe.
In a wide and deep bowl, beat the egg and the flour. Add the milk little by little while stirring. Then melt the butter and add it. Stir again until integrated and obtain a fine, homogeneous mass without lumps. we let it rest in the fridge for about 30 minutes.
Heat a pancake maker, crepe maker, or nonstick skillet over medium-high heat. Let’s pour enough mixture to cover the bottom and make a very thin pancake. We have to move the pan so that the dough spreads over the entire base. Cook for a few seconds, until the edges peel off by themselves from the pan.
Then we turn it over (we can do this by carefully grasping the edges with our fingers) and cook it on the other side. We transfer the first pancake to a plate and cover it with a clean cloth so that don’t get cold. Repeat the operation with the rest of the dough until finished.
We spread a layer of dulce de leche on the surface of each pancake and roll them up, giving them cylindrical. We can also fold them in half twice, giving them the shape of a handkerchief. We serve immediately decorating the pancakes to taste: with a thread of dulce de leche, with fresh fruit, with icing sugar, etc.
With what to accompany the pancakes with dulce de leche
Depending on when you serve them, these pancakes with dulce de leche They can be taken as they are or accompanied by a coffee, an infusion, a hot chocolate or a glass of milk.
