Cucumber noodles combined with natural yogurt result in a delicious salad for the summer months and any type of Mediterranean food. This recipe is great and it’s ready in Just 10 minutes.
This combination is quick, light and a fresh addition to almost any food. They look a lot like zucchini noodles, but there’s no need to cook them to keep them nice and crisp and refreshing. The cucumber, along with the carrot, is another of my favorite vegetables to make raw noodles.
They will last for about two days in the fridge, but it is better if they are fresh. For this, it is best to store with kitchen paper to absorb excess moisture.
For the cucumber noodles, wash and dry the units well. Make the spirals using a spiralizer, mandoline, hand slicer, or toothed peeler. Once ready, reserve in a deep bowl.
Add the lemon zest and natural yogurt. Stir carefully so as not to break the noodles. Season with salt and pepper, and sesame seeds. Store in the fridge until serving time and sprinkle dried dill, or any fresh herb of preference.
