Crazy potatoes came into our lives -oh, surprise!- through social networks. It seems to be a plate latin american origin, very popular in the Canary Islands, which is prepared and served in fast food establishments, bars and beach bars. Everyone has their own way of making and presenting them.
The base of the dish is made up of a generous amount of French fries, a meat base, sausages and various types of sauces and cheeses. There are versions that incorporate chili, mustard and oregano, others are loaded with pepper, onion and bacon. Be that as it may, the point of the crazy Canarian potatoes is the abundance of ingredientsof all of them without exception.

Heat the broth in a saucepan and boil the chicken breast in it for 20 minutes. When it is ready, we crumble it, mix it with half of the aioli and we reserve.
Cut the ham and sauté it in a pan with a little oil. We also cut the salami and cheese into cubes. We reserve everything while we prepare the potatoes, which we peel and cut into sticks. We fry them in a pan with abundant oil. Once ready, drain them and season them.
Ready all the ingredients it only remains to plate. We place a base of fried potatoes in a serving dish, spread the sautéed ham, salami and cheese in cubes on top. Season generously with the rest of the alioli and with the brava sauce. To eat!
