Halfway between a soup, a stew and a stew, the sancocho is by definition one of the great dishes of Latin American cuisineeven jumping its popularity to the Canary Islands, where it is also cooked.
Although the first author of the sancocho is not at all clear, the truth is that there are national versions such as the Colombian sancocho or the Dominican sancocho that are very famous, although really It is cooked in much of Latin America.
In essence it is, as we said, a soup or boiled that has different types of meat, some tubers and other vegetables and vegetables. Today we are going to prepare this version of Colombian cuisine, although in each house the ingredients change at will.
Almost everything it carries can now be easily found in stores and markets, as is the case with plantain, cassava, sweet potato or cilantro, but if you do not have any of the ingredients nothing happens.
Cook the beef rib for 30 minutes in a pressure cooker in salted water and reserve the rib and broth. Later peel and cut all the vegetables into pieces of about two centimeters approximately. In addition, we chop the garlic, cilantro and parsley very finely with a knife.
With the mise en place ready, put in a saucepan** to cook the strained rib cooking broth,** the pork tail cut into pieces, the chicken (including its carcass) and bring to the boil, removing the foam that will come out of cooking the pork and chicken.

When it comes back to a boil, defoam again, add the chopped herbs, lower to minimum cooking and leave cook another half hour until chicken is fully cooked. When it is, we take it out, fray it and reserve it next to the beef rib.
