This cinnamon chicken it is tasty, aromatic and worthy of any celebration table, although it has not been conceived as such. But now that we are gathering family and friends, I present it to you as a good option for these special moments… and for many others!
It is a simple recipe to elaborate in which the cooking time is the key so that the chicken remains tender and juicy. The fruits that accompany it serve as a garnish and round off the dish, although there may be those who want to serve it with something else. To taste.
For this kind of dish I like to use chicken thighs with skin, because it is a tender piece, with flavor and its fat prevents it from being dry. It can be prepared with breasts, with a whole chicken in pieces or with thighs. Use the part that is most comfortable for you, but do not stop preparing this cutie.
Peel the onion and cut it into julienne strips. Heat a stock of extra virgin olive oil in a saucepan and cook over low heat for 10-15 minutes or until transparent. Add the chicken thighs, making hole between onion so that they brown on both sides.
Then add salt and pepper to taste and add the fruits and nuts, the broth and the cinnamon stick. Cover the pan and cook over low heat for at least an hour or until the chicken is tender enough that the meat falls away from the bone. We serve immediately.
