Surely you have not heard of the delicious Serranía de Ronda chorizo soups a traditional Malaga recipe, which we have learned to make following the instructions of the cooking blog Me Tastes to Malaga and which today we have versioned here to teach you how to make them in a simple way.
As is customary in traditional cuisine, this is a great recipe for use, perfect for releasing a little broth from the previous day’s stew, as well as loaf bread or bread that is getting stale. Although it could be called chorizo soup, it is traditional to use its name in the diminutive and plural form, being known in the localities of the area as sopitas de chorizo.
There are two fundamental elements for this recipe to turn out well. The first is that you have to do it in the moment; and the second is that you have the best ingredients, in this case, a good established bread for two or three days, a good dry-aged chorizo from the village and a stew or stew broth that provides the intense flavor to this soup.
Chop the onion and sauté it in olive oil, removing it when it is transparent. In the same oil, we fry the chorizo cut into slices. We remove that oil. We cut the bread, better if it is a couple of days old, into slices.
We toast the bread until golden in the same saucepan., with the oil that remains at the bottom. If we see that we need it, we can add a little bit of the oil that we had removed. We return the onion and add the broth from the stew.
When it has cooked two or three minutes, We put the pieces of fried chorizo and the toasted bread in the casserole and let it cook for another two or three minutes of cooking. Then we turn off the heat, letting the soups cool a little, before serving it to the table, although we serve immediately so that they arrive piping hot.
