Combine the flour with the yeast, salt and sugar in the bowl of a stand mixer or a large bowl. Apart lightly beat the eggs with the yolks, the oil and 200 ml of water. Add these ingredients to the main mixture and combine until everything is incorporated. Add more water if the dough is dryIt should be quite moist and soft.
Knead on a lightly floured table or with the robot at slow speed about 10-15 minutes. If it is very unmanageable, let it rest for 20-30 minutes covered and continue kneading until it detaches from the walls of the bowl or weight and is very elastic. We must avoid adding much more flour if we want a soft bread that lasts longer.
Form a ball, grease a large clean container with oil, introduce the dough, roll to grease it well, cover with plastic film or a shower cap and let rise one hour.
Then degas on the oiled table with oil, knead to remove air, form a ball again and return to the bowl, allowing it to rise until it exceeds twice its original size.
Can be done one big braid or two small ones, and the first can be simple with three strands, with four or five (if you have more experience) or, as in our case, with two floors. For simple braids, you just have to weigh the dough and divide it into portions of the same weight.
For the special party braid, divide first into three equal pieces and put two of them back together. Then divide each portion into three equal pieces, in such a way as to obtain three identical large pieces and three identical smaller pieces.
Prepare a large baking tray with parchment paper. Roll each portion, with the table and oiled hands if necessary. Stretch the large portions forming equal strips and braid each other, joining the ends well; place on the tray, diagonally if necessary (it has to grow).
Do the same with the other small portions, forming a smaller braid, and place just above the other. Paint with the other beaten egg, grease a large sheet of plastic film, cover without pressing and let rise until has more than doubled.
Preheat the oven to 160ºC, carefully remove the film, paint again with egg and cover with seeds to taste. Bake for 20 minutes, rotate the tray 180º and continue baking for another 20-25 minutes. If it gets too toasty at the end, cover with aluminum foil. Cool completely on a rack.
