If you like cauliflower but you don’t like that characteristic sulfur smell so much, try this recipe by cooking it with a aromatic curry coconut milk sauce, accompanied by fresh or frozen peas. This crucifera combines wonderfully with the flavors of Indian-inspired cuisine, as we have seen on other occasions.
On this occasion we return to the practical book by the German Alfons Schuhbeck to now prepare a vegan dish enjoyed on its own, although it is also an excellent option as a starter or garnish for both vegetable proteins and meat and fish. Use the curry mixture that you like the most, adjusting its intensity as you prefer, for example with a more spicy touch, and try serving it with other toppings that you like.
Cut the cauliflower into small florets, discarding the thickest, ugliest part of the stem, as detailed here. Wash and drain well. Heat a pot with the broth or salted water and add the florets when it is boiling. Boil about 8 minutes and drain quickly reserving 400 ml of cooking broth.
Grate or finely chop the garlic and a piece of ginger to taste. Heat the coconut milk with both ingredients in the same pot and add the curry and turmeric, stirring with a whisk, without letting it boil. Add about 200 ml of cauliflower broth. Dissolve the cornstarch in a little cold water and add.
Return the cauliflower, stir well and add more reserved broth if necessary, depending on whether you prefer the dish more or less broth. Cook for about 3-4 minutes and add the peas. Continue cooking until the vegetables be at the desired pointcorrect salt and serve with sesame and / or chopped fresh herbs to taste.
