This broccoli and quinoa flour bread is a healthy recipe and perfect for those intolerant to gluten. The result is a green dough, of good crumb and spongy texture. And the best is express since it is cooked in the microwave.
With these simple ingredients: egg, a little flour and chemical yeast or bicarbonate, you have a bread in 5 minutes. If you feel like it, replace the broccoli with cauliflower or carrot and the flour, it can be with normal, wholemeal, oatmeal, quinoa, chickpeas or ground almond flour. In other words, celiacs can also enjoy its benefits.
Being made from broccoli, this bread is a source of vitamins A and of group B, C and K. It also provides folic acid and calcium, being especially useful for vegetarian people at breakfast, lunch or dinner. Take the broccoli and break the flowers, in the processor or grate until you get some green crumbs.
Choose a bowl suitable for the microwave (it can be both round or square, as you like) and with the help of a brush, paint the walls with olive oil.
In a bowl, break the egg and beat for a few seconds manually.
Add the quinoa flour, the ground flaxseed, the broccoli, the yeast, salt and pepper, and integrate all the ingredients with the help of a spoon or a fork until you have a green paste.
Pour into the chosen container and cook 4 to 5 minutes at full power or until done. Depending on the power of the microwave, it may require half a minute or so, it should be spongy but not wet.
Unmold and let cool for a few seconds. Cut in half and toast (optional) before stuffing, spreading or chopping on its own.
