One of the best pasta sauces is undoubtedly the Bolognese sauce. Together with the carbonara, the pesto, the marinara or the putanesca, it is at the pinnacle of the most popular sauces of Italian cuisine.
Today’s recipe is the one from the traditional bolognese and we accompany it with macaroni, although any other short and tubular pasta would go great. Its little holes and recesses, into which the sauce slips, are perfect and give a lot of play. Nothing prevents us from using long pasta, but perhaps we would not receive the approval of our Italian neighbors.
The key to making an authentic Bolognese is to add a good meat broth and wine -red or white-. Some people add some cream or milk to add creaminess to the preparation, but if you follow our recipe to the letter you won’t need it. You will obtain a well blended sauce with very tender and juicy meat.
Finely chop the onion, carrot and celery. we redo them, over medium heat, in a wide frying pan with a drizzle of extra virgin olive oil for five minutes. We splash to taste.
Add the minced meat, a little salt and continue to sauté while stirring so that it is as loose as possible. When it changes color, add the grated tomato and cook over low heat for five more minutes.
We water with the wine and let it evaporate the alcohol before adding the broth and concentrated tomato. Cover the pan and cook over very low heat for an hour.
When the sauce is almost ready, we remove the lid and let it cook for another 15-20 minutes. The liquid will evaporate and it will become creamy. We take the opportunity to cook the macaroni following the manufacturer’s instructions, subtracting couple of minutes of the indicated time.
Add the macaroni bolognese along with a bit of the cooking water and we give it one last stroke of cooking so that the sauce absorbs the added liquid and the macaroni is finished cooking. We serve immediately.
