Today we are going to prepare a simple and flavorful Italian recipe. It is about bigoli in anchovy sauce or bigoli in saucethe typical Venetian pasta recipe that is made with a variety of long pasta similar to spaghetti, but a little thicker.
The other day I found these bigoli in the fresh pasta section of Lidl and that’s why I decided to prepare this classic recipe from the Italian region of the Veneto. If you want, you can make this same pasta recipe with spaghetti or spaghettini if it is easier to find them in your area.
In the past, this recipe was made with salted sardines but now it is more common to make it with anchovies, with the onion, anchovy and bigoli being the only ingredients that we are going to need to prepare this delicious Italian pasta dish.
To prepare the sauce, we will chop two onions very finely and put them in a pan to which we will have added the oil from the can of anchovies. Add a little more olive oil because the oil from the anchovies will not be enough and we put the onion to sauté over low heat, so that it does not brown.
When it is transparent, after about eight or ten minutes, add the anchovies. If you use quality Cantabrian anchovies, you can put two or three anchovy fillets per person. You can add them whole or cut them into pieces, it doesn’t matter because as soon as they warm up and you mix them, they will melt with the onion.
With the onion running and the anchovies almost melted, we cook the pasta, following the manufacturer’s instructions. For this fresh pasta it indicated eight minutes, in water with a little salt. When going to prepare a sauce with anchovies, I added half the usual salt. When it was cooked, we drained the pasta well and distributed it among the plates. We put out the onion and anchovy sauce.
The bigoli are then covered with a generous coverage of the onion and anchovy sauce, and add some of the oil that remains in the pan over the rest of the pasta. Finally, it is decorated with a sprig of curly parsley, and it is brought to the table immediately. Grated cheese is not usually used in this recipe.
