The inspiration for this pasta salad is Hawaiian pizza, which is sure to stir feelings of love or hate. With carrot, chives and pineapple, of course, it has a creamy and refreshing dressing which makes the dish a perfect one for the summer. Pasta salads are perfect for hot days, although we believe that they can be eaten at any time of the year.
Needless to say, this salad is mainly characterized by carrying pineapple, to then play with the other ingredients. The base of everything can be pasta, lettuce, rice and we can even innovate with quinoa. In addition to the fruit, we can add peas, red peppers, corn or tofu for a new adaptation, like this one that without cooked ham, is special to enjoy with vegetarian and vegan diners.
One of the central elements is the dressing or the sauce it carries. I’m sure you’ll love it and the good news is that it works in any green salad, with Catalan-style spinach and even as a spread on crackers. I suggest making in quantity as it keeps well in the fridge for up to 4 days.
Cook the pasta according to the package instructions. Once it is ready, drain and reserve.
Meanwhile, prepare all the ingredients: cut the pineapple into small pieces, grate the carrot and chop the chives.
For the assembly of dressingin a bowl, mix the natural yogurt, the mustard, the pineapple juice, the onion powder, the apple cider vinegar, the salt and the pepper and integrate until you have a homogeneous sauce. In a bowl, dump the vegetables, the pasta, the dressing and stir with the help of a spoon so that all the ingredients are impregnated with the sauce.
Reserve in the refrigerator until the moment of consumption. When serving, a few threads of olive oil and a few turns of freshly ground black pepper.
