Without a doubt, it is one of my favorite pasta dishes. Or at least, it is so far. the sauce is creamy Y consistent but not heavy. And of great taste!

in a bowl Mix the tahini sauce with the olive oil, lemon juice, apple vinegar, dijon mustard, maple syrup, water and salt to taste until you have an integrated sauce. Reserve.
cook the pasta preferably following the instructions. Run under cold water to stop the cooking process.
Mix the cooked pastawith the vegetables and the sauce to integrate the flavors. Serve with a squeeze of lemon and freshly ground black pepper (optional).
