Today we propose three super easy appetizers that can be prepared in no time last minute: two cold and one hot, but just as simple.
With these three canapés, some hors d’oeuvres and a main course, you have the New Year’s Eve dinner fixed.
the little package
The first of these canapés is an invention of the bar emilio house, in the Madrid neighborhood of Prosperidad. Or, rather, from one of his most famous clients, Paco, who one day asked them to add some mussels to his famous wedding canapé.
It sounds like nonsense, but it is a canapé that, made with good ingredients – Casa Emilio’s anchovies in vinegar are probably the best in Madrid – surprises with its intense umami flavor. It’s a delight.
To do it, all you have to do is cut a slice of bread, add two anchovies, two pickled anchovies and three pickled mussels. And ready!
Cheese, bacon and wild boar’s head canape
This is a skewer that appears in the book Cocina sin shame of George’s David Y Martin Berasategui. Although it is a hot canapé, it can be prepared in advance: it only needs a heat stroke before serving.
First of all, we preheat the oven to 190º. In a bowl, mix four egg yolks, 250 g of grated Gruyère cheese and a tablespoon of finely chopped bacon cubes. Let it cold down. Once cold, we form small balls and, just before serving, we place them on a slice of bread. We put it in the oven for 3 or 4 minutes. until the cheese is melted. When removing them, we place a slice of chicharrones or wild boar’s head on top.
Bologna, ricotta and walnut rolls
This skewer is a classic from the Italian kitchen bible, The Silver Spoon. And, as you will see, it has no mystery.
We just have to buy a good Bologna mortadella, cut into not too thin slices, and mix in a bowl 100 g of ricotta, a yellow pepper, sliced and finely chopped, and 4 peeled and chopped walnuts. Now we are going to cut each slice of mortadella into 4 four triangles that we are going to fill with this cream. We serve it rolled up on a slice of bread or alone on a plate.
