For most of us, September still means definitively going back to routine, going back to office hours and recovering that day-to-day life at home, which in summer gets a little out of place. With minimal planning – we are not going to fool ourselves, we have to organize ourselves and take some time – and being aware of the menus we choose, taking our food to work is a good way to return to healthy habits, maintain a balanced diet and also to save, avoiding going out to eat anywhere or ultra-processed precooked foods.
For these first weeks of transition towards autumn, which are sometimes very uphill with that nostalgia for the holidays and the tedium of getting up early and the workday itself, we have gathered together below easy and healthy recipes that allow us to eat well without many complications. The idea is that most dishes can be taken in a container, some to eat cold and others to heat at the office, but they are also very practical recipes to prepare in advance and have lunch or dinner at home.
Nutritious and delicious salads
Pasta salad with mozzarella and tuna
In a pot of boiling salted water, we cook the pasta according to the time indicated on the package, in this case, 11 minutes, to leave it al dente. Drain, wash with cold water and reserve.
Cut the cherry tomatoes in half. We prepare a flock with the minced garlic clove, the basil leaves, a splash of olive oil and salt. Mix with pasta and cherry tomatoes. Finally, we serve the salad with the diced mozzarella, the tuna and the black olives.

Baked juicy chicken breasts

Ingredients for 2 breasts. 2 skinless chicken breasts, 1 liter of water, 75 g of salt, 50 ml of mustard, 5 ml of lemon juice, 2 teaspoons of sweet paprika, 1/2 teaspoon of hot paprika, 1/2 teaspoon of ground cumin , 1/2 teaspoon of granulated garlic, 20 ml of extra virgin olive oil and black pepper.
Elaboration. Fill a container with water, slightly warm, and dissolve the salt. Introduce the breasts ensuring that they are completely covered, cover the container and leave to rest for at least 30 minutes, better two hours, in the refrigerator. Preheat the oven to 200ºC and prepare a tray or fountain. Remove the chicken from the brine and spread with a drizzle of olive oil all over. Add black pepper, lemon juice, the two types of paprika and mustard, and massage well to cover them with this paste. Bake for 25-30 minutes, turning halfway through cooking. Check that they are cooked with a meat thermometer, if available.

Ingredients for 4 people. 400-450 g of clean cod, the meat of 5 rehydrated chorizo peppers, 2 chopped onions, 3 cloves of garlic, 1 slice of loaf bread, 30 g of tomato sauce, 30 ml of extra virgin olive oil, flour and Salt.
Elaboration. In a large saucepan, sauté the chopped onions with a little olive oil. When they are transparent, add the chopped garlic and the crumbled bread. Once it is golden, add the meat of the chorizo pepper, the tomato sauce, give it a few turns and add the water and a little salt. Let cook over medium heat for 20 minutes. Flour the cod, shaking off the excess and fry for a minute on both sides in a frying pan with a little oil. We pass the sauce through the food mill and put it in the pan again, place the cod slices and cook the whole for about 10-15 minutes. Season the sauce with salt if necessary.

Wok zucchini noodles with vegetables

Ingredients for 2 people. 1 large zucchini, 1 carrot, 1 small onion, 1 spring onion, 1/2 red bell pepper, 5 ml sunflower oil, 5 ml sesame or coconut oil, 15 ml tamari or soy sauce, 1 tsp. sesame.
Elaboration. We wash the zucchini and pass it through a vegetable cutter in the form of a spiral or spiralizer. We wash and peel the carrot and also pass it through the spiralizer, although we can slice it finely. Peel the onion and spring onion and cut them in half. Then cut each half into thin strips. Wash the red pepper and cut into thin strips. Heat the oils in a wok or large skillet and sauté the onion, spring onion, carrot and pepper for two or three minutes. We stir nonstop. Add the tamari or soy sauce, a teaspoon of sesame seeds and stir. Add the zucchini noodles, mix everything well and sauté for a couple of minutes before serving.

Ingredients. 200 g of raw almonds without skin, 2.5 ml of extra virgin olive oil and coarse salt.
Elaboration. Arrange the almonds in a microwave-safe container. Add between 2.5 and 5 ml of good extra virgin olive oil, and a very light pinch of fine salt. Stir well so that all the almonds are impregnated and put the lid on, if any. Otherwise, use a microwave lid. Heat for 2 minutes at medium power. Stir and reheat for 1 minute now at full power. Stir again and heat in intervals of 30 seconds at medium power, until they have the desired toasted point. Serve with coarse salt and, if desired, a little extra virgin olive oil, stirring well.
