We start by cleaning the liver of veins; requires quite a lot of patience. It is the same if the liver is undone because later we will rebuild it again, the important thing is that it is very clean.
In a large enough bowl, we put a medical bandage, soak it well with the Port wine and then drain it. We wrap the liver in the medical bandage giving it two or three turns with it so that it takes a cylindrical shape, squeezing well.
In a deep container we put a bed of salt, on this we place the bandaged liver and cover it with the rest of the salt, without leaving any exposed spots. We put a weight on top and keep it in the fridge for three days.
We unwrap it carefully so that it does not pick up salt. If we are not going to use it all, we can cut it into two or three pieces and freeze well wrapped in aluminum foil.
