If already in a more ordinary summer we give ourselves completely to the cold creams and soups, the heat waves fill our refrigerators with gazpachos, salmorejos and more very cold spoons. We love the most traditional recipes, but this week we have dived through the networks to point out different alternatives with which to give more variety to our menus at home.
The blogosphere and social networks continue to be a great source of inspiration to encourage our cook bug in these weeks of certain torrid tediumwhen the high temperatures and little night’s rest leave us without the desire to turn on the stove or start the oven.
In this way we share the latest refreshing spoon recipes that we have recorded, dishes full of color, flavor and nutrients to keep us well fed without being too hot in the kitchen, with many ideas to accompany them and have a good assortment of lunches and dinners without falling into routine or boredom.
Gazpacho for all tastes
How a perfect gazpacho should be is a bit of a matter of personal taste, but it is clear that it is the absolute queen of summer, and beyond. In reality, the basic ingredients in its traditional version do not vary much, but we can always play with their proportion, the garnish and other details. The recipe of Andalusian gazpacho of Frabisa’s cuisine is one of the most canonical and with a simply super appetizing appearance for any day, with a purely vegetable accompaniment.
Now we are going to play around giving it original touches, for example with the idea of merging Loleta kitchens, which offers us a fantastic mexican style gazpacho recovering the native origin of this vegetable -which is a fruit-, adding coriander, tabasco and avocado, as well as crispy nachos to accompany.
Cholé’s version of Being Biotiful doesn’t sound bad either, who gives it a denser texture so that it can hold up well to the garnish, in this case with homemade croutons, sautéed capers crisp and olive, plus a refreshing touch of fresh basil. The same herb is found in the cucumber gazpacho of Alimentarte, with its intense green color.
Also green is the curious and original broccoli gazpacho of ChupChupChup, a different way to enjoy the healthy properties of this cruciferous, and that can encourage those who are most reluctant to incorporate it into their diet.
The gazpache versions with seasonal fruit could not be missing. Among our favorites we find the recipes from Rebeca’s kitchen, with the tasty Cherry Gazpachoand the always moisturizing and fresh Watermelon Gazpacho that teaches us Cooking with Angi, which does not need to add water and is perfect to drink in glasses.
Salmorejos and more cold creams
We leave the gazpachos but we continue giving to the cold creams -the borders between one and the other are diffuse, yes-, starting with another very traditional recipe. In fact, the White garlic It would be prior to gazpacho as we know it, since we have already mentioned that the tomato did not reach Spain until we brought it from America. In Recetas de scandal the traditional version using Thermomix awaits us.
We now turn to denser, satiating and nutritious creams, with original proposals for salmorejos. The recipe for Cogollos de agua, a fabulous beet salmorejo accompanied by juicy figs, although the corn brine from Shoot the cook, which we can do with frozen grains but which would undoubtedly look amazing grilling some corn on the grill.
lighter is the carrot brine by Paula in Con las zarpas en la masa, who asks us if it can be called as such when it does not have bread, so we would be facing a “false” salmorejo. Details aside, the texture obtained with the vegetable is fabulous, adding vitamins, fiber and water, just like in the cold carrot and apple cream of Cooking among olive trees.
And we close with another very light, refreshing and full-season soup, easy to adapt to the variety of fruit that we have at home or that we like the most, the Melon Soup of 24 Carrots, whose author prepares with toad skin -a good choice) and adds yogurt and tahini to give it a greater creaminess and add, incidentally, good nutrients.
