Mexican sweet bread has dozens of varieties. Among the most classic and popular is the Garibaldia Vanilla sponge cake covered with apricot jam and sugar pearls.

Gualletti and the original Gribaldi recipe
We started the Bread Route next to Santa Clara and arrived at Gualletti, in Polanco, where they protect one of the city’s most beloved recipes.
In this signature bakery and pastries you can try Garibaldi in its original version and prepared by Eduardo Laposse, the grandson of Giovanni Lapoose, the creator of this sweet muffin.
Here you find the Gribaldi in its small version, in its traditional size and even in the shape of a heart. Chef Eduardo follows his grandfather’s recipewhich he keeps written by hand and takes jealous care of it, which is why he did not reveal to us the extra ingredients that make both the cake and the cake so special. apricot jam with citrus accents.
What he did share with us was the history of this bread. His grandfather, Giovanni Laposse, was a chocolatier and confectioner originally from Turin, Italy., who migrated to Mexico City at the beginning of the 20th century, to support the Tenconi family with their El Globo bakery. It was there, shortly before the Mexican Revolution, where Giovanni created this special recipe that he named ‘Garibaldi’ in honor of Giuseppe Garibaldia hero of Italian unification.
Laposse returned to Italy in 1919, but returned to Mexico five years later, and decided to open his own bakery called ‘El Nuevo Globo’.
Currently, you can try Laposse’s recipe at Gualletti. Here you can also buy pieces of traditional bread such as the bride, the donuts, the concha or the borreguitos, an elongated bread covered in a sugar crust and filled with jam. These breads are ideal for snacking.
At Gualletti the pieces of bread range from ten pesos and You will find classic breads and original proposals such as the Rosca de Reyes panqué or the concha panqué. There are also other breads like the New York Roll.
