And there are also companies, such as Tabladillo, that work daily to evolve in different elaborations and make known all the possibilities of this traditional delicacy. Different preparations with which to make the most of the exquisite flavor and smooth texture of a meat as delicious as suckling pig, also through innovative, exotic and international proposals such as, for example, this Summer suckling pig, a recipe offered by Cárnicas Tabladillo, a family business dedicated, for more than fifty years, to raising and making suckling pig from Segovia.
Summer suckling pig with tomato skewers and mozarrella with pesto
INGREDIENTS
- 1 suckling pig of 4.5 kilos
- Water
- Coarse salt and fine salt
- Cherry tomatoes
- Mozzarella balls
- 150g fresh basil
- 150 ml of mild virgin olive oil.
- 50 g pine nuts
- 50 g of pecorino or parmesan cheese
- 1 clove garlic
ELABORATION
First of all, we preheat the oven to 180ºC.
Season the suckling pig with coarse salt for the ribs.
In a clay pot we place some wood to prevent the suckling pig from being in contact with the bottom, place it on top, with the skin facing down, and generously add water.
We let the suckling pig cook in the oven for an hour, then we take it out and turn it over — now with the skin facing up — and puncture the skin so that air bubbles do not form. We put it back in the oven for about 75 minutes or so, then we raise the temperature to 200 ºC and leave another 15 minutes, until we see that the suckling pig has a golden, homogeneous color and with a crispy skin. If necessary, rectify the salt point of the juice with fine salt.
On the other hand, during the cooking process we take the opportunity to prepare the skewers: we wash the basil leaves, and let them dry in the air, then we put them in a blender together with the garlic and pine nuts and we crush everything, but not much. Then add the oil little by little and finally the cheese, and rectify the salt. Finally we puncture the tomatoes and the mozarrella balls on the skewers and bathe with the pesto sauce.
We serve the suckling pig accompanied by the tomato skewers and mozarrella with pesto.
