Balta
By: Pedro Aguilar Ricalde, general editor of Life and Style
When you are a fan of bread in all its presentations, it is difficult to choose a favorite, but things are a bit easier when it comes to seasonal breads. In the case of Pan de MuertoThere are some characteristics that seem essential to me: that it is covered by the correct amount of sugar and that the surface is firm, but not dry; that the interior is spongy and not dry; that the smell invites you to give it a bite in which all the textures mix to create that moment when everything is fine.
This 2021, my favorite proposals are those of the Balta restaurant of Sofitel Mexico City Reforma. Created by chef Julio César Moreno, these options range from traditional bread with orange and orange blossom essence to stuffed versions.
Personally and despite almost always preferring the more traditional alternatives, I think that the metate chocolate bread with totomoxtle ash crust and chocolate cream filling, as well as the pumpkin seed crusted castile pumpkin bread and Caramelia chocolate cream filling offer a touch of originality, with an incredible balance of sweetness and the touch of typically Mexican ingredients.
Land Garat

Something that you can find in a beautiful cafeteria and that is everywhere in CDMX, Tierra Garat’s bread of the dead is my recommendation, if you like stuffed breads that is for you, it costs only 40 pesos, for the conviviality and sharing is a great option.
The Moor

Probably a pan de muerto to share can be ideal, although sometimes you just want to try it so as not to miss the flavor of the season. Currently there are many versions of this pastry product in which the ingredients are not prohibited, however, this season my recommendation is the churros de muerto, this creation of El Moro, they mix the elements of traditional bread in this presentation, which may not be for everyone, it may be.
But if the bread means the bones and bones left in the earthly world, what does it matter to eat some churros that could be our remains in the future.
