Preheat the oven to 170ºC with air, or 180ºC with top and bottom heat. Grease or line with non-stick baking paper round mold detachable (preferably) about 20 cm in diameter.

Beat the eggs in a bowl with the sweetener and vanilla, using electric or manual whisks. Add the ground almonds, the sifted cocoa powder and a pinch of salt, beating until incorporated. Add the butter and chocolate mixture and combine or gently beat until there are no lumps.

Pour into the mold, leveling the surface with a spatula or the back of a spoon, tap it on the table to remove any air bubbles and bake for a few 18-22 minutesuntil when you pierce the center a toothpick comes out only slightly stained.

Wait a bit out of the oven before unmolding and cooling completely on a grid. It will be more flavorful and juicy if it is refrigerated after a few hours.
