Dark chocolate with high cocoa purity has a place in a healthy diet, and it is easy to gradually adapt the palate to the taste of less sugary varieties. To satisfy our sweetest desires we can prepare homemade snacks that add nutrients, like these very simple ones chocolate, pomegranate and almond rocks, with a delicious combination of textures.
We have adapted the idea from the Elche Susan Diaz, owner and chef at the head of the Michelin-starred La Finca restaurant, ambassador of the Granada Mollar de Elche, with PDO. We have increased the proportion of fruit and mixed everything together to create an even simpler dessert in which all the ingredients explode in the mouth when tasted.
Ideally, use a dark chocolate, 90-95% pure, but if it’s too strong for you, start with an 80-85% tablet; there are some without sugars, but check if the sweeteners they use to sweeten you feel good, as they sometimes cause discomfort to certain digestive pathologies.
If you don’t have the pomegranate ready, to take advantage of to open at least two units and shell them slowly as explained here; Keeps well in an airtight container in the fridge for two to three days.
Chop the chocolate and prepare a bain-marie over the heat, always without letting the water touch the upper container and without letting it boil. Melt the chocolate and mix gently with a pastry tongue or spoon.
In a bowl, mix the pomegranate with the slightly chopped or diced almonds, carefully don’t crush the fruit. Add the melted chocolate that is well fluid and mix to homogenize.
Quickly take portions with a teaspoon and deposit them forming mountains on a sheet of parchment paper or baking paper. Decorate with a few flakes of salt and let cool completely. Store in the fridge if they are not going to be consumed right away or if it is hot.

If we haven’t made huge chocolate rocks, they will be perfect snacks to devour in one bite like sweet cherry to a lunch or dinner, but they are also great in the middle of the afternoon to replenish energy or combat that anxiety for sweets that sometimes plays tricks on us. They pair deliciously well with black coffee or a tea or spiced infusion.
