According to data from the Organization of Mexican Pork Producers (Opormex), only in January 2022, 231,817 tons of pork were consumed in the country18 percent more than the 195,738 tons registered in the same month of the previous year.
On the other hand, in February the upward trend continued, with a consumption of 215,374 tons, which meant a 19 percent rebound compared to the 181,429 tons observed in the same month of 2021.
In short, these types of dishes are of great relevance in Mexican gastronomy and, as a result, various businesses arise every year in a large part of the Mexican Republic and, in some cases, abroad.
