Considered a culinary treasure, jericallas are a traditional dessert from the Mexican region of Jalisco, more specifically from the city of Guadalajara. They are a mix between flan, custard and crème brùlée, a super delicious sweet that is ideal to put the finishing touch to any special occasion (or not).

However, in the absence of one or the other, they can be prepared in any type of individual container that resists cooking in the oven. We boil the milk with the cinnamon stick (we can add a piece of lemon and/or orange peel to provide an extra point of flavor), we remove it from the heat and add the vanilla essence. Let it cold down before continuing.

We distribute the mixture into individual molds suitable for the oven, without reaching the edge, and we place them in a baking dish. We fill the dish with a finger of boiling water and put it in the oven, preheated to 180ºC with heat up and down.
We cook the jericallas in a bain-marie for 30 minutes or until they are set, but juicy, inside. To brown the surface, we turn on the grill, raise the jericallas to the top of the oven and give them a strong blast of heat. We serve hot or cold, to taste.
