Every time I go to France I end up buying magazines or recipe books to get ideas. And one of the things that fascinates me the most is seeing the number of combinations for cooking with cheese that the Gauls have: they end up throwing it away. I don’t blame them.
There are hundreds of ways to prepare baked zucchini, but it would never have occurred to me to mix them with comté cheese and serrano ham, as I saw in a special vegetable issue of the veteran magazine Gourmand.
The recipe, which featured on the magazine’s cover image, is as simple as it is attractive. AND It has no mystery. Of course, it is better to use a good serrano ham than the country jambon typical of France that the recipe indicated: ours is infinitely better.
Heat the oven to 180º C. While it warms up, wash the zucchini, discard the two ends and cut them, without peeling, into transverse sheets.
Cook the zucchini slices in a frying pan with a little olive oil until golden brown on both sides. Season and reserve.
Cut the comté into slices. Peel the garlic cloves and cut them into slices. Once everything is ready, choose a dish for the oven and alternate, vertically, a sheet of zucchini, two slices of serrano ham, another sheet of zucchini and a slice of comté. Repeat the operation until the ingredients are gone. Finally, distribute the sliced garlic between the ingredients and put a couple of bay leaves on top.
Since the zucchini is already cooked, just leave the tray in the oven for a few 10 minutes, until the cheese is melted and the ham is crispy. Serve immediately.

What to serve with zucchini millefeuille
Needless to say, you are going to be amazed by this recipe. Furthermore, it is perfect as single dishperhaps accompanied by some good fries or a side of white rice.
It is so good that, even if you make it during the week, I recommend opening a young red wine to accompany her. She’s going to do better on the plate.
