Are zucchini meatballs they are perfect to achieve that goal. And, of course, ideal for those who love this vegetable and want to try new recipes. The only gadget we need is a grater, although we can also use a food processor with that function. The rest, ingredients and utensils, it is very likely that you have it at hand in your kitchens.
The trick to getting these meatballs right is to get one juicy but manageable dough. After grating the zucchini, it is necessary to extract as much liquid as possible by letting them drain on a strainer and then drying with a cloth. Once this is done, the rest of the process is the same as for any other meatball recipe.
We wash the zucchini, remove the ends and grate. Season and place inside a fine mesh strainer. Let it drain over a deep container for an hour, covering the strainer to protect it from ambient dirt.
The zucchini will have lost a lot of water after this time, but we can get more out by pressing with a spoon. After we pass them to a clean cloth, we roll the ends and press so that release the traces of water they may contain.
In a deep bowl, mix the egg, the Parmesan and ricotta cheeses, the breadcrumbs, the granulated garlic and the basil. Add the zucchini and season to taste. We mix until we get a homogeneous mass. If the dough is too soft we can add more breadcrumbs.
We take portions of the dough, roll them and coat them in flour. Heat plenty of oil in a pan and fry the meatballs over high heat until golden brown on all sides. Drain on a tray with absorbent paper and serve immediately.
