After a first selection among more than twenty candidates from great restaurants around the country, the national final of the ninth edition of the Jerez Cup has had the participation of some of the most prominent Spanish restaurants: El Club Allard ( Madrid, one Michelin star), Ambivium (Peñafiel, Valladolid, one Michelin star), Atrio (Cáceres, two Michelin stars), La Carboná (Jerez de la Frontera, Cádiz) and Venta Moncalvillo (Daroca, La Rioja, one Michelin star) .
And the proposal selected by the jury, for “its work of precision and synchronization between the room and the kitchen and for the audacity of a proposal based on the plant world, assuming the risk of having to face a very important challenge for the wine that it has been more than surpassed with the selected pairings ”, was that of the Venta Moncalvillo team formed by chef Juan Pablo Stefanini and sommelier Iván Sánchez, who will represent Spain in the international final of this contest, betting on an extraordinary tandem between the Riojan garden and Jerez wines translated into three harmonies:
- As a starter, And yet…, An elaboration from artichoke, potato and cheese harmonized with a Palo Cortado Apostoles VORS 30 Years by González Byass.
- The main course, Tribute to the past, with chard, cod tripe and cumin, a proposal that delves into the culinary tradition of previous generations, paired with the complex intensity of a century-old Palo Cortado: The bag. Roberto Amillo Collection
- And for dessert, From salty to sweet…, A dish made up of spinach and pine nuts paired with a Pale Cream by Bodegas Urium.
The Jerez Cup
The Copa Jerez contest is, after eight editions and more than a decade of history, the largest international gastronomic meeting around sherry. Organized by the Regulatory Council and the Federation of Bodegas del Marco de Jerez (Fedejerez), it has established itself as one of the great events on the international gastronomic scene.
Awarded as the best event around wine in the International Wine Challenge, this contest is attended by some of the best restaurants in the world, from eight countries: Germany, Belgium, Denmark, Spain, the United States, the Netherlands, the United Kingdom and Russia, with the participation in each edition of more than five hundred professionals.

Description
The Venta Moncalvillo restaurant (Daroca, Rioja), owned by the Echapresto brothers, will be the Spanish representative in the national final of the Jerez Cup, an international gastronomic contest that will be held on November 9 and 10 with the participation of restaurants from eight countries.
