The Diputación de Jaén announces a new edition of the International Prize for cooking with Extra Virgin Olive Oil Jaén Paraíso Interior, a contest aimed at professional chefs and individuals who dedicate themselves to the hospitality sector, who in their proposals must use some of the Jaén oils Selection 2021, the best in the province in the last harvest.
Last year, and despite the difficulties caused by the pandemic, the International Prize for cooking with Extra Virgin Olive Oil Jaén Paraíso Interior had the participation of fifty-one chefs. On this occasion, and as in the last edition, the selection process will be carried out online, and then a live final will be held in Jaén at the end of September.
Kitchen with extra virgin from Jaén
Participation is free and each participant may present only one recipe, a dish in which one of the main ingredients is one of the eight Jaén Selección 2021 oils, all of the picual variety, seven from conventional production and one from organic production: Bañón 1802 , Hacienda La Laguna, November, Olibaeza, Oro Bailén, Oro de Cánava Picualia and ecological Mergaoliva.
This year, the jury will be made up of Pedro Sánchez (Bagá, a Michelin star), Juan Aceituno (Dama Juana, a Michelin star), Ingrid Serra, winner of the 2020 edition, and Fátima Gismero, winner of the Madrid Fusion 2021 Revelation Pastry Prize, as well as others. members who will be added over the next few weeks.
In the first phase of the contest, all the applications submitted will be analyzed, assessing the pairing of the ingredients with the oils used, the presentation and innovation of the dish, as well as the correct use of each of the ingredients in the different phases of the recipe preparation. Under these criteria, ten semi-finalist recipes will be selected and, from among them, three finalists, who will be the ones that go to the final, the only face-to-face part of the contest.
The presentation of recipes will be until September 7, and the ten semifinalists and three finalists will be announced in the middle of that same month. The contest is endowed with a first prize of 8,000 euros, a second of 3,000 and a third of 1,000 euros, all of them with their corresponding certifying diploma.
