Pasta is one of the favorite products around the world. Although it is one of the most ancient foods and its origin is unknown, probably linked to the development of agriculture itself – it is simply a matter of mixing a cereal with water – it is a product that can be found in popular kitchens in many countries and cultures.
Legend has it that it was Marco Polo who brought pasta to Europe from China, on one of his trips, although some historical references assure that vermicelli were previously made in the Italian city of Pisa, very similar to spaghetti, although somewhat finer.
Although pasta has been assumed in the traditional cookbooks of many countries, Italy is still the country where it is most consumed and the largest producer in the world, with companies such as Barilla, founded in 1877 by Pietro Barilla, and which currently produces products that give rise to to dishes as appetizing as these Spaghetti cacio e pepe.
Spaghetti with cheese and pepper
INGREDIENTS
For 4 people
- 160 g of spaghetti
- 100 g of Pecorino cheese, or a cured sheep cheese
- Extra virgin olive oil
- Black pepper
ELABORATION
In a tall pot with a large amount of slightly salty boiling water, cook the spaghetti following the instructions on the label so that it is al dente.
Meanwhile we mix the cheese with the black pepper and a couple of tablespoons of extra virgin olive oil. We add a splash of the hot pasta water to the mixture, so that the cheese melts and forms a creamier consistency.
When the pasta is ready, drain it and reserve part of the cooking water.
We mix the pasta with the creamy cheese sauce, and in case we see that it lacks moisture we add the cooking water that we had reserved. Add black pepper to taste and serve.
