During the season, I love making a lot of mushroom dishes, especially when I find boletus that look as good as the ones I bought the other day at the market. To make something special, I bought some medium-sized white prawns and made a delicious sautéed boletus and prawns in odorous stew that I am still enchanted even if it is only with the memory.
It was seen and not seen but I assure you that the taste was unforgettable. This recipe is not cheap, I admit it, because I found the boletus at about 14 euros per kilo and the prawns at 12 but with about 400 g of each ingredient, we enjoyed a wonderful hearty stir fry for 3 people That we completed with a salad, and we were well satisfied with a plate full of tasty nuances.
The goal is to get a creamy, honeyed stew, with a soft and simple texture, which, fork to fork, leaves us well satiated with a plate full of flavors that blend in the mouth. Delicious indeed.
We started cleaning the boletus well with a damp cloth and a sharp lace to remove the dirt-stained bottom. Then we laminate the mushrooms into pieces. Meanwhile, we put a frying pan with olive oil and brown in it a garlic and the chilli that we later remove.
We put the boletus in the pan and sauté them for a few minutes, letting them soften without browning. What we do to do this is cook them with a little more oil than necessary for them to be candied, and then we remove that excess. Add the prawns, -peeled and after removing the intestine- and cook them until they change color.
Sauté the whole and add the fragrant wine, and let the boletus and prawns cook over medium heat for another 2 minutes so that the alcohol in the wine evaporates. We do this by continuously moving the pan so that a sauce with the odorous emulsion, the sautéed oil and the juices that the mushrooms and prawns will have released. Serve immediately in the same pan, sprinkling with chopped parsley.
