Tamales are one of the most popular dishes in Mexico, although their drawback is that they are not exactly healthy. A tradition with many stories that remains in force
The origin of this food is too old and dates back to pre-Hispanic times. Throughout the Mesoamerican region there are indications that This corn-based dish was prepared.

Recipe to prepare healthy tamales
Although it seems hard to believe that this is possible, the nutritionist Yessica Osorno, who is also a diabetes educator, made it happen. Through a video, she shared the preparation of a variant that she describes as healthy tamales. Its consumption is recommended for people who, due to illness, cannot consume the original recipe.
In this case, it all starts with a drastic change in the preparation of the dough. On the one hand, a large cauliflower is required along with two eggs, cornmeal, olive oil and baking powder. Everything must be combined until a uniform mass is obtained.
On the other hand, for the sauce three green tomatoes, two cloves of garlic, onion, coriander, green chilies and salt are required. Everything should be blended for a couple of minutes.
While for the filling you can use chicken or mushrooms. For the final part, all the mixtures must be combined inside previously hydrated corn leaves. Each one must be closed and placed inside a pot in a bain-marie for 40 minutes. In the end, an interesting variant of some healthy tamales.
