How did cod get into Mexican cuisine?
Cod is a delicious white fish that Mexicans usually enjoy during the holiday season.. However, contrary to the totoaba, cod is not a fish native to Mexico. Below we tell you how it got here.
This fish lives in the cold, salty waters of Norway, which range between 4 and 6 degrees in temperature. It is also possible to find it in the northern part of the Scandinavian countries and the Iberian Peninsula.
Like many other foods and products, cod was brought by the Spanish after the Conquest. However, it gained popularity until the Viceroyalty, as its consumption became very common during the vigil, as well as for December celebrations.

Characteristics
Its scientific name is Gadus morhua and belongs to the family of migratory fish Gadidae. They measure just over a meter and can weigh 45 kilos. It can reach a longevity of up to 20 years.
Cod is a carnivorous species, so it feeds on crustaceans, zooplankton, mollusks, worms and even other fish such as herring or sardines.
Being a white fish, it is low in fat. Likewise, the oil made from the liver of this fish is rich in vitamins A and D and Omega 3.
Its consumption also helps strengthen the immune system, reduce joint and muscle pain, improve digestion and even helps stabilize the central nervous system.
Ingredients
- 500 grams of shredded cod
- 250 grams of cooked potatoes and chopped into small pieces
- One onion, thinly sliced
- 200 grams of sliced olives
- 150 grams of raisins
- 100 grams of slivered almonds
- 3/4 kilo of finely chopped tomatoes
- Finely chopped parsley and güero chiles
- Salt to taste
Preparation
- Put a saucepan on the heat and add oil.
- Once the oil is hot, add the onion, tomato and parsley and stir.
- Wait a few minutes and add the cod and chili.
- Let the mixture boil and add the potatoes, olives and raisins.
- Once all the juice is consumed you can remove the stew from the heat.
- Let it cool, add the almonds and now, everything is ready to enjoy your stew in the company of your loved ones.
