Promoted by the Madrid Institute for Rural, Agrarian and Food Research (IMIDRA), the campaign involves sixteen restaurants in the region that will offer, off the menu, a dish in a sweet or savory version made with these horticultural varieties recovered by IMIDRA researchers after twenty-five years of research.
The restaurants
Among the participating establishments are from a century-old tavern, Alberto House, which opened its doors in 1827 in the center of Madrid, to the restaurant Chiron, in the town of Valdemoro, directed by chef Iván Muñoz and with a Michelin star.
In addition to other venues in Madrid capital such as Taramara, Latasia, Chamberí Eggplant, Atocha, 107, Harry & Sally’s watch, Florida Retreat Y La Aubergine Tavern, and establishments located in municipalities of the region such as Bamba, in Pozuelo de Alarcón, The town crier’s house, in Chinchón, Koma, at the Box Art Hotel in Collado Mediano, The Holly of Boadilla Y The terrace of the Palace, both in Boadilla del Monte, and Marepolis, in Alcorcón.
In addition, a pastry shop located in the Lavapiés neighborhood has joined this initiative, The sweet bar, which will provide the touch of sweet, during the seven days that this campaign lasts.
Traditional Tomato from Madrid
As a result of the strong claim that local and local products have experienced, experts from the Community of Madrid estimate that the production of these three traditional varieties of tomato in the region —Gordo, Moruno and Antiguo— will exceed 40,000 kilos consumed in 2020 to 52,000 until October 2021, due not only to the increase in the number of hectares devoted to the cultivation of these varieties -15,000 in total instead of 3,000 in 2020-, but also to the increase in the number of plants donated by IMIDRA for this season, 21,000, compared to 12,000 the previous season.
These plants are part of the 600,000 total donated to farmers in Madrid this year, which are 100,000 more than those delivered in 2020, and which include all kinds of vegetables, most of them traditional varieties.
