If you use non-stick pans and casseroles made with teflon or similar, and it is a material that almost everyone uses, do not use metal spatulas or knives, because they produce scratches and nicks in the non-stick material, reducing its properties. Food will stick to areas where the Teflon is damaged.
For this type of pans, it is better to use a silicone spatula, or of wood.
And what happens if you use cast iron pans? There are people who still use them, because they keep the heat better if you use fire, and a more traditional flavor.

But when has been seasoned with oil several times (experts use soybean oil), a layer of protection is created that allows the use of a metal spatula No problem.
Remember that cast iron pans cannot be put in the dishwasher or washed with soap. You have to use a stiff brush and hot water, and dry completely. Drying is very important.
And what about metal scourers that many people use? Experts advise not to use them with pans or pots made of stainless steel, cast iron or non-stick material.
The reality is that, although we like them more, metal spatulas or knives don’t go well with most pans and casseroles on the market. Today there are other less aggressive materials that offer the same service.
