WHAT IS CELIAC DISEASE?
Celiac disease is a disorder of the immune system caused by an intolerance to gluten, a protein found in wheat, rye, barley and other derived cereals.
WHAT ARE THE SYMPTOMS?
Children with it have trouble gaining weight and developing according to age. In older children, this condition can cause diarrhea, stomach pain, flatulence, weight loss, fatigue, and painful eczema on the skin.
SPECIAL DIET
Although there is no cure for this disease, there are ways to remedy the symptoms and any damage the intestines have suffered, such as avoiding foods with gluten and carefully reading the labels of all products before your child consumes them.
HOW TO TAKE CARE OF A CELIAC CHILD’S DIET
Wheat, rye, and barley are gluten-free cereals that should be completely eliminated from the diet and replaced with a cereal free of that protein.
These gluten-free foods can be eaten by your child:
FOOD ALLOWED
The list includes rice, chickpeas, tapioca, and potato. In addition to meat, fish, chicken, eggs, edible fat, sugar, honey, oils, butter, legumes, nuts, milk, cheese, fruits, vegetables, and popcorn.
FOOD NOT ALLOWED
Avoid breads made from wheat, oats, barley, and rye, pastas, some herbal teas, and flavored coffees, salad dressings, potato chips, flour tortillas, sauces, breaded or fried foods, soy sauce, cakes, pies, muffins and cookies.
A diet rich in fruits and vegetables will help its good development.
