Chef Fabiola Meraz
Potosina winner of various awards, including traditional Mexican cuisine. She lives in Puerto Vallarta, Jalisco, where she collaborates in different restaurants and is the founder of the initiative “They get together” whose objective is to highlight the women chefs, mixologists and sommeliers of the destination, organizing events with a cause to help vulnerable groups in the port.
- Signature marinated technique similar to aguachile and tuba (fermented drink from the palm trunk). The fish is cured with salt, sugar and root for a special touch.
Chef Salvador Carrillo
Proud salty leg, he has been the winner of various culinary competitions, for example, the Best Chef of Mediterranean Cuisine 2020 in the United Arab Emirates where he stayed for a while. He currently has his own restaurant La Tienda Grande, in what was the first store in 1936.
- For his gastronomic creation “children’s game”, he is based on the dishes that he once tasted and that are still in his memory.

Chef Mario Castro
Mario gracefully balances the technical side of gastronomy with the intuition of the soul. Currently, he is in charge of the kitchen of the Majahuitas Club. Originally from Oaxaca, his talent blossomed in kitchens throughout Mexico, Spain and the United States, working closely with Michelin-starred chefs.

Chef Sebastian Varona
I study the career of chef du cuisine and begins his experience working in important French, Italian and international restaurants. She has lived in Puerto Vallarta since 2015. She has created menus from the heart, with a sustainable proposal for the region, supporting local businesses, but above all, respecting the flavors of each element. He is originally from Salamanca, Guanajuato.

mixologist mario mendoza
Biker and designer of sensory experiences with pairing dinners and evolutionary cocktails. He has 22 years of experience promoting Mexican culture with cocktails made in a sustainable way and national products.
He is the creator of the Museum of Distillates and Brews of Mexico project and is the founder and president of BEVA (Specialized Bartenders Vallarta Association), where professionalism, passion and honesty are promoted in the sale of a liquid experience.
Raicillero, Jorge Carbajal
Jorge has a great track record in the hospitality industry. He is the creator of the Hacienda el Divisadero project, producing top quality raicilla and being a reference in Vallarta, with which he has won various awards in the distillate field.
In Jalisco there are distillates with denomination of origin and other distillates from different regions, as well as ancestral drinks. The 400-year-old Raicilla is produced in 16 municipalities in Jalisco and one in Nayarit.
